Will the cuff overlap downhill ski boots or are these meant for more alpine skiing?

Mike, we tested this out for you. The cuff would fit over the beefiest boots we carry, with the zipper open. If you have a small shell size they could work. Yes they are designed for Alpine Touring and other winter aerobic sports.

For the medium, what's an inseam length? I'm 165 and 5'10", athletic runner build. I prefer my mountain pants to not be too short. Thanks!

Hey Jake! No need to worry about inseam length -- Crazy Idea inseams tend to be longer than most. Inseam on the medium Acceleration is right around 83cm/33".

What would be the main differences between this pant and the more-well reviewed Century? Who would lean towards this pant? Thanks!

Cory, Good question that you made me work for. Quick points on the Century, It has an Athletic fit, drawstring waist and high breathability. The Acceleration pant in the Italian translation ' High resistant and durable mountaineering trousers' . Crazy idea calls it a regular fit and comes with a belt not shown in the picture. Also the lower leg portion has a waterproof membrane. So besides looks, there is more differences then meets the eye.
