We have noticed that the newer generation of Pomoca skins tends to run a little bit shorter, due to the re-designed tip buckle which is smaller than it used to be. As a result, it tends to sit a little higher up on the tip of the ski, effectively shortening the length a little bit.
That said, you do not need plush all the way to the tail - as long as the strap reaches the tail of the ski with an appropriate amount of tension on the skin, you should be okay.
There is not concrete data on which length will work for which ski length, partially because all skis measure a little bit differently and are not really standardized - and not everyone measures skis the same way. Skis can easily vary 2-3cm from their stated length.

If you want to modify the trim-to-fit skins to fit the race tips, you will need to remove the tip fix that comes on them and rivet the race tips on. It will require some trimming and work with scissors and a hole punch, but it is doable! Or, you could build it off-the-roll - I wouldn't necessarily say it's less work, it's probably more effort in the end since you have to assemble the tails as well.
Alternatively, you can modify Pomoca skins to fit a Dynafit Rubber Tip. It just requires a little bit of trimming with a razor blade to remove some plastic material from the tip bracket!
Most would prefer 120mm! The 100mm width would work, but would not offer much coverage at the tip and tail - a bit straighter cut, for better glide. The 120mm will have superior grip on icy skin tracks and side-hills, at the cost of a little glide.
Tour Pro now looks similar to the Free Pro (purchased spring 2024)... I have preferred the durability of the Climb Pro for the majority of my missions compared to weight savings of a Free Pro. But uuuh... it just looks like a budget cuts now.

I am leaning to the 120mm as I don't mind a little bit of base showing (8.5mm on each side at the tip, probably less with edge exposed). I'm just not sure about the length. Is it better to be at the top of the size range (187 vs. 190) or the bottom (187 vs. 185), or does it not matter as long as you're in the range?
Most people would prefer the 140, to get more coverage. With the 120mm width, you will have a good amount of exposed base. But in powder, for an experienced skier, you could do it (and some do, for better glide).
