This ski looks loke a good option being raceable but more variable conditions friendly.
Two questions:
A) at 6’3” and 195 lbs what length do I want? The 168 cm I am guessing, but race skis are very short so double checking.
B) what boots and bindings would go well with this binding for race plus fast and long tours in challenging terrain?
The Fast 71 is a great first race ski choice that has more versatility outside of just racing compared to skinnier, true race skis. Either length would work (160cm is the minimum allowed ski length in men's divisions so you see most competetive male racers on 160ish lengths), but the 168 will be more fun and easier to ski and perform better in varied conditions. The Fast 71 in a 168 will be fine for racing on, but gives you room to upgrade in the future if you decide to go all-in on a racing setup (meaning 160 length, 64ish underfoot); the Fast 71 would still have a place in your quiver as a fast and ultralight speed mountaineering ski without being overly redundant with a true, competetive race setup.

Do any race brakes even fit these? I have Trofeo which go to 70 supposedly. I guess I could bend them to make them fit.
The Fast series is the replacement for the Race Pro. They do have an updated cork layer in the tip which is supposed to add a little bit of dampening. Otherwise, a very similar ski.
With the 71, some of the race brakes can likely be made to fit. For those with brakeless race bindings, there are some other options like the ATK race brakes which would work.
